What’s up guys? How you’re doing? :)

Sorry, this came up later than I said it would be as I’ve been very busy the last few days. I just didn’t have the energy to do it. But anyways, I can see that some of you are very interested in knowing how I made that beautiful rainbow bread last Tuesday and I promised you guys that I would post the step-by-step here on my Tumblr and that’s what I’m going to do right now.

First thing first, I just want to give out a HUGE credit to Tammy Jetty, or better known as Yoyomax12 on YouTube, for sharing and teaching me this recipe. I wanted to start, or shall I say celebrate, my first day after graduating college by doing something out of the box. During my exams period, my mum showed me yoyomax12’s video on how to make a rainbow bread and I was like “Yeah, I wanna do that. After I finish my exams of course.” And that’s what I did! And it came out beautifully. I’m so proud on my first attempt.

I could go on forever but I’m cutting it short for now. So enjoy baking this guys. It really is easy to bake a rainbow bread but I must warn you. To bake this rainbow bread you must have very strong biceps. You’ll know what I mean later during the process. Good luck!

INGREDIENTS:

1 cup milk
1 large egg yolk
1 1/2 tablespoons melted butter
2 1/2 tablespoons sugar
1 envelope (2 1/4 tsp) instant quick rise yeast
3/4 tablespoon salt
3 cups (approx) flour

Now that you’ve got all the ingredients, LET’S START! :D

Pour the milk into a large bowl. Now any bowl would do fine but I’m just using this clear one so that you can see more clearly.

Then, add the egg yolk. Here, I’m using a large one.

Blend the milk and egg yolk together. I’m doing this manually gently as I don’t want to fluffed up the mixture by creating bubbles.

Warm the mixture in the microwave on high heat for 45-50 seconds until warm. This will create a suitable condition later when the yeast is added. You need to make sure it is an optimum condition for them to work at their best. …Organisms. Sorry, my head is still partially in the exam mode.

Add the yeast, sugar and butter and mix them all together until you’ve reached an even consistency. I’m using an unsalted butter for this since salt will be added in the dry mixture later. You don’t want your bread to be salty now.

P.S. This is one of my favourite picture. Love the details coming from the yeast! :)

Moving on to the dry ingredients! Mix the salt and flour in a separate bowl. Sifting is not needed here. You can if you want to but I just find it a waste of time.

Add the flour/salt mixture one cup at a time to the wet mixture. And then a little at a time until dough ball forms. It is important for you not to pour the whole dry mixture straight away into the wet mixture because then you’ll find it’s hard to reach an equilibrium mix. Hence, more work for you.

Keep adding the dry mixture. You may have to change to a wooden spoon to mix it. Here, I change to a large metal spoon as it’s getting harder and harder to mix. Make sure no to bend the metal spoon haha! :)

Now when the dough is starting to pull away from the bowl and gather in the middle, it’s time for you to roll out the dough and knead it on the countertop. Add some flour on the countertop to prevent the dough from sticking. Knead the dough for about 5 minutes until the dough is no longer sticky but smooth and elastic. Then, divide the dough into 7 (seven) approximately even parts. You don’t need to spend so much time on making the parts to be exact.

I’m using liquid food colouring. You can use food colouring pastes if you want to. Simply make a small well in the middle of the small dough ball and drop some food colouring into it.

Knead the small dough ball on the countertop until the whole dough is evenly coloured. You may add more food colouring to it until the colour that you want is achieved. But make sure they are even! You don’t want your bread to be partially white and partially coloured! And also note that: Don’t tear the dough like you would do with a playdough! ONLY KNEAD IT. Or else you might kill the yeast! Remember, they are also organisms. :)

When this step is done, place the coloured dough ball into a greased bowl to prevent it from sticking. Cover the bowl with a cling film to create an anaerobic condition for the yeast so it’ll ferment the dough and making it rises up and fluffed. Leave it to rise up for at least 2 hours.

Here, I substituted the indigo colour with pink since my little sister loves pink and I personally think it’s much nicer. :) So do that like so and leave them to rise up in a warm area for two hours.

Grease the bread pan.

After allowing them risen up, flatten out the coloured dough balls into roughly the size of the bread pan that you’re using. Make sure to be gentle with the dough balls. There’s yeast in there. Like my mama said, “Treat the dough like a baby!” Make sure to brush the top of the surface of each layer with some water (not too much but in a generous amount!) to make sure the layers stick to each other. Now when you press the layers together, make sure that you get all the air bubbles between the layers out or else these will create holes in your bread.

When this step is done, you’ll get something like this. :)

Place the whole thing in the grease pan and cover the bread pan with a damped clean towel. Again, leave the dough to rise up again for another 2 hours. I know, you have to be patient with this recipe. It’s like a baby process. A baby won’t come out in a matter of seconds but you have to wait a whole 9 months for it! But the moment when it’s out, it’ll be worth it I promise just like this one. :)

Here’s a tip: Place the dough in the oven with only light bulb is on (don’t turn on the heat!) and leave it to rise. It’ll create a perfect warm environment. :)

When it’s all risen up, remove the damp cloth. Pre-heat the oven to 375F or 190C for at least 10 minutes. Then place the ‘soon-to-be’ bread into the oven. Let it bake for about 30 minutes.

Check on the bread. You know when it’s done when the top part is kinda a bit brown in colour and when you tap it you’ll hear a hollow sound. You can always push in a stick right down in the middle and when no dough sticks to it when you pull it out, you know it’s done.

This is optional. I like to brush some butter on the surface of the bread so that it will be soft when it’s cooled and not all hard.

And voila! You got yourself a perfect rainbow bread! Leave the bread to cool on the drying tray for 10-15 minutes before slicing it into pieces. But of course, I didn’t do this. I straight away slice it and quickly grab a piece and eat the first slice when it’s still warm and has the smell of the oven. Imagine it. It was superb! See? It wasn’t that hard was it? Enjoy your rainbow bread! :)
